Breathing Room: Thanksgiving Day Emergency Cooking Aid

Someone in my social media feed suggested in a few years it would be obvious artificial intelligence was to the internet what microplastics are to the environment.

Another pundit cracked wise yesterday about AI, wondering how many cooking disasters would happen today because folks relied on answers they found on the internet.

The amount of crap out there on the internet generated by AI is already dangerous. It’s not helped by the business models search engines and browsers use to elevate content.

The biggest challenges on Thanksgiving are generally about cooking a turkey. Butterball brand has answered related questions for years now and is trustworthy source because their brand is at stake – they’re committed to your positive turkey cooking experience.

But here’s the nature of the problem: if you should search Google for “Butterball turkey how to” the top result is goddamned dead bird site X.

You can’t blindly trust cooking information off X right now; there’s simply too much false information and spoofed accounts. This scenario should also tell you something about X: they spent a huge wad of cash to be the first search result instead of spending money on moderation to fight back the proliferation of crap on X.

Go directly to Butterball.com instead, double checking the URL to make sure you didn’t enter a typo.

The same goes for instructions on any brand name product – don’t search for them without first going directly to the brand’s site.

The next best alternative for information is going directly to food and cooking sites you’re already familiar with and trust – like

bonappetit.com

allrecipes.com

whatscookingamerica.net

seriouseats.com

thekitchn.com

marthastewart.com

saveur.com.

These links are not endorsements, merely shared for ease of access and AI avoidance. One personal exception is whatscookingamerica.net — this has been my favorite site for cooking prime rib and standing rib roast. Never had a bad meal relying on their information.

I’ll offer something tried-and-true which I’ve made in volumes to keep on my shelf after forgetting to buy pumpkin pie spice mix one year but needing it at the last minute.

Pumpkin Pie Spice Mix

Per pie:

1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/4 teaspoon ground ginger
1/8 teaspoon ground cloves

Sometimes I add more ginger and cloves for a spicier tasting pie.

Don’t have pumpkin pie spice mix, but also don’t have all those ingredients? Do what you can with what you have on hand, be creative. Add more vanilla to the pumpkin batter, maybe even add some finely grated lemon rind to replace the ginger.

And if your guests don’t care for the result, blame AI search results.

Then go to penzeys.com and order their pumpkin pie spice mix to restock your shelf. That’s another tried-and-true resource.

One more warning: there has been a proliferation of phishing in search engines using the same technique the dead bird site applied, only buying “sponsored” slots at the top of results pages.

As a rule I never, ever click on “sponsored” links anymore. Too many have been bought by crooks who spoof a similar-looking domain name, use nearly identical content matching real brands, and then attack folks who click on their fallacious link.

Other emergencies which may occur on Thanksgiving:

– If you are going to attend a family event at which there are persons who make you uncomfortable, plan ahead for an emergency exit. Organize an “emergency” call or text placed by a trusted friend at a specific time(s) so that you can gracefully leave before things get worse.

– Fires are the most common accident on Thanksgiving. Make sure flammable non-food items are kept clear of the stove or grill. Have a box of baking SODA (never powder) or salt for small grease fires, sprinkling the powder directly on the flames and not from the side. A pot lid may also work to suffocate small fires. Keep ready an appropriate fire extinguisher on hand though once used the cooking area will be contaminated. Better to prevent fires including avoiding overloading electrical outlets and power strips. – Know where to take injured if the person needs more help than you can offer. What’s the closest emergency room or urgent care facility? Have you checked the route from your house for recent road construction? I mention this because a couple friends have had to drive to the ER during the last two weeks, one in the middle of the night. Thank goodness there wasn’t any impediment on the road.

– Learn unexpectedly you’ve been around someone who has COVID? Get away from them, leave closed spaces. Viral load matters; the more virus particles, the sicker you are likely to become even with a vaccine or booster, though vaccine/booster makes it far more likely you’ll have a mild to asymptomatic case. Gargle with salt water and use a saline nasal spray immediately after an unexpected exposure to reduce the amount of virus particles in your throat; saline lavage regimens have reduced illness due to COVID (see https://acaai.org/news/new-study-gargling-with-salt-water-may-help-prevent-covid-hospitalization/). And for gods’ sake wear an N95 mask in public shared spaces with persons whose health status you don’t know because the pandemic isn’t over no matter how much corporations want you to believe otherwise.

Supporting Those Who Make Good Trouble

In my work as a pastor, I cross paths with a lot of “Good Trouble” makers. Some are church-related and others not religious at all. Some are connected with big international groups, others work at the national or state level, and still others are involved with seat-of-the-pants local organizations with a small board and a couple of key volunteers. What they all have in common is what John Lewis talked about – they saw something that is not right, not fair, not just, and they said no. They said “no” to what is, and then rolled up their sleeves to say “yes” to what is needed.

As we approach the end of the year, I want to lift up a number of these makers of Good Trouble. If you want to enjoy their stories, read on and then go link-hopping through their websites. If you share their passion for standing up against a particular wrong, a specific injustice, or a structural unfairness, I urge you to make a little Good Trouble of your own, by finding the “Donate” buttons on their websites and help them out.

One group of Good Trouble makers I interact with a lot are those involved in feeding the hungry — hungry being people without homes who have been caught in economic distress to entire communities devastated by a natural disaster. Either way, the Good Trouble makers in the groups below are people who see someone in need of a basic meal and say “this is not right, not fair, not just — we gotta get these folks some food.”

Feeding America:

Feeding America is the largest hunger-relief organization in the United States.

Our mission is to advance change in America by ensuring equitable access to nutritious food for all in partnership with food banks, policymakers, supporters, and the communities we serve.

Feeding America is an umbrella organization made up of food banks that span the country. A food bank is a wholesale operation, designed to collect donations (especially in-kind) from farmers and food companies and then making them available at little or no cost to local food pantries who do the retail work of distributing it to those in need. Feeding America has a big directory of regional food banks, and each of these food banks has its own list of food pantries they support.

Here in metro Kansas City, Harvesters is our food bank, and I’ve worked with them and a number of food pantries they support. Harvesters is a top-notch, transparent operation, and they expect nothing less from the food pantries that utilize them. To gain access to Harvesters, a food pantry has to have their location inspected and their leaders have to go through a Harvesters training program, in part to familiarize themselves with the Harvesters reporting obligations,  and in part to make sure that the gifts Harvesters has received are put to good use. No letting stuff spoil, no making clients sick, and no taking some off the top for your own organization.

Harvesters provides food and related household products to more than 760 nonprofit agencies including emergency food pantries, community kitchens, homeless shelters, children’s homes and others. We also offer education programs to increase community awareness of hunger and teach about good nutrition.

Harvesters is a certified member of Feeding America, a nationwide network of more than 200 food banks. In 2011, Harvesters was Feeding America’s Food Bank of the Year. We are a registered 501(c)3 nonprofit organization.

One big element of of Harvesters is that they require that any food pantry that uses their resources must be completely free to the people in need, and free of any religious requirements. Not only can these groups not charge any financial fees, but they cannot require their patrons to attend a bible study or other religious event. A church-run pantry can say “We operate this food pantry because of our Christian faith” but they cannot require people to attend worship before getting a couple sacks of food.

If you are interested in dealing with food insecurity in the US, whether at a national, regional, or street level, Feeding America and its affiliates offer a wealth of places that could use your support.

Other hunger-related organizations are aimed at disaster relief. Two that I long have supported are World Central Kitchen and Operation BBQ Relief (a group that our own Jim White works with). These are groups that come in after a disaster has hit, and work to get the community back on its feet with immediate support, feeding both the local residents affected by the disaster as well as the medical folks, utility crews, and others who have come to deal with the medical and logistical work of recovery.

World Central Kitchen:

WCK responds to natural disasters, man-made crises, and humanitarian emergencies around the world. We’re a team of food first responders, mobilizing with the urgency of now to get meals to the people who need them most. Deploying our model of quick action, leveraging local resources, and adapting in real time, we know that a nourishing meal in a time of crisis is so much more than a plate of food—it’s hope, it’s dignity, and it’s a sign that someone cares.

Operation BBQ Relief:

Armed with a caravan of cooks, mobile pits, kitchens and volunteers, Operation BBQ Relief delivers the healing power of BBQ in times of need, feeding first responders and communities affected by natural disasters along with year-round efforts to fight hunger through The Always Serving Project® and Camp OBR™ programs.

Another group of Good Trouble makers that I am becoming more familiar with are those who work and speak from the margins of society. Some groups work to challenge those at the center, those with the power, those whose work is causing pain at the margins. Other groups work with those at the margins to simply say “we are here,” lifting up and encouraging one another not to be content with scraps from the master’s table. Note, please, that both groups do challenging and uplifting things, just with a different emphasis and approach.

For example, consider the following groups, all associated with the Native American community.

Association on American Indian Affairs:

The Association on American Indian Affairs is the oldest non-profit serving Indian Country protecting sovereignty, preserving culture, educating youth and building capacity. The Association was formed in 1922 to change the destructive path of federal policy from assimilation, termination and allotment, to sovereignty, ​self-determination and self-sufficiency. Throughout our 100-year history, we have provided national advocacy on watershed issues that support sovereignty and culture, while working at a grassroots level with Tribes to support the implementation of programs that affect real lives on the ground.

Native American Rights Fund:

Our Mission: The Native American Rights Fund holds governments accountable. We fight to protect Native American rights, resources, and lifeways through litigation, legal advocacy, and legal expertise.

Native American Journalists Association:

NAJA serves and empowers Native journalists through programs and actions designed to enrich journalism and promote Native cultures.

NAJA recognizes Native Americans as distinct peoples based on tradition and culture. In this spirit, NAJA educates and unifies its membership through journalism programs that promote diversity and defends challenges to free press, speech and expression. NAJA is committed to increasing the representation of Native journalists in mainstream media. NAJA encourages both mainstream and tribal media to attain the highest standards of professionalism, ethics and responsibility.

Indian Country Today:

Telling the stories of indigenous communities by indigenous journalists is at the core of Indian Country Today. Since our beginnings in 1981 as a weekly newspaper, ICT has grown into the largest news organization serving Native American communities. In April 2020, we expanded into public broadcasting through a daily newscast about how the coronavirus pandemic has affected American Indians, First Nations and Alaska Natives.

With this bold new step into public television, Indian Country Today has become a spacious channel through which it distributes news across multiple platforms. Coverage includes digital, print and broadcast news outlets featuring top stories, news, lifestyle and classified job listings.

American Indian Science and Engineering Society:

The American Indian Science and Engineering Society (AISES) is a national nonprofit organization focused on substantially increasing the representation of Indigenous peoples of North America and the Pacific Islands in science, technology, engineering, and math (STEM) studies and careers.

Founded in 1977, growing the AISES membership above our current 5,900 individual members is key to achieving our mission. AISES supports 230 affiliated pre-college schools, 196 chartered college and university chapters, 3 tribal chapters, and 18 professional chapters in the U.S. and Canada. We promote the highest standards of education and professional excellence to widen the STEM workforce and grow sector support. We highlight the geographic, economic, and social aspects of STEM education and careers.

In addition to awarding nearly $12 million and counting in academic scholarships, AISES offers internships, professional development and career resources, national and regional conferences, leadership development summits, and other STEM-focused programming.

I could go on like this for a long time, but let me offer just one more example of Good Trouble makers, whose passion is to stand against book banning and book burning.

In both Kansas and Missouri, public libraries and public schools are seeing more and more challenges to books written by Good Trouble makers who write to address matters of race, gender, sexual orientation, and other similar things. The folks challenging these kinds of books say “Don’t get political” but what they really mean is “Don’t trouble the waters and make us look at uncomfortable things.”

On the one hand, the fact that these folks are upset with libraries and schools is a good thing. It means that the Good Trouble maker writers, librarians, teachers, and administrators are having an effect. They are making Good Trouble, and it’s causing problematic people to feel uncomfortable. On the other hand, these writers, librarians, teachers, and administrators need support, to encourage them to keep on keeping on.

PEN America:

PEN America stands at the intersection of literature and human rights to protect free expression in the United States and worldwide. We champion the freedom to write, recognizing the power of the word to transform the world. Our mission is to unite writers and their allies to celebrate creative expression and defend the liberties that make it possible.

Turkey in Limerick

In Eire you can now find a turkey

Those sides though can come off as quirky

I don’t think I’m much better at the Limerick than I was when I tried one last Christmas!

Spouse and I have invited his cousins for an American-style Thanksgiving dinner, but since today is not a holiday, we’re going to host on Saturday. This will be our first dinner party post lockdown and the first big dinner in our new kitchen. And no, the painting is not quite done but it’ll have to work.

I wasn’t kidding about the sides: As I noted in Rayne’s thread, I’m going to make my latest Turkey Day innovation: Kung Pao Rutabega. I love the vegetable but during lockdown I wanted to do something other than another mashed root vegetable. So I tried this. Not only does the rutabega really complement the Szechuan flavors, but the nuttiness of it adds something as well.

Rutabegas here, by the way — Swedes, they’re called — are positively enormous. I cycle to the market so always have to pick the smallest one to fit in my bike pannier.

The one other trick of my first big Turkey Day with family here in Ireland is that the farmer from whom I’m getting the turkey is geared towards Christmas, not Thanksgiving. So when I passed by his stall the other day, he warned me that he won’t be around to pass off the turkey. He’ll be in Spain. He assures me the lady with the stall across the way will bring it for me.

It’s going to be just me and my spouse here empty nesting a holiday for the first time in forever. My youngest has to work because Big Pharma production lines run 7/24/365; my oldest is spending the holiday with her partner’s family (we get Christmas). We’ll have our big turkey feast on Saturday when my youngest finally gets a day off.

But I’m going to make my squash rolls today so that we have them for the tiny pork roast hubs and I will have tomorrow in lieu of turkey. These are what I bring to all the family gatherings — they’re my signature baked good. This batch will be made with puree from a hybrid squash, a cross between a kabocha and a Hubbard. The flesh was very dense and sweet, deep orange. I’ve already made one batch with this particular squash. The dough was almost too moist so I’ll cut back a bit this time on water. The dough made excellent cinnamon rolls: tender, not too sweet.

Give these a whirl if you have pumpkin or squash on hand.

Squash or Pumpkin Cloverleaf Rolls
Makes 16 cloverleaf dinner rolls

INGREDIENTS:

1 cup squash or pumpkin puree

1/2 cup water
1/2 cup milk
1/3 cup butter, melted

4-1/2 cups unbleached all-purpose flour
3 tablespoons light or dark brown sugar
2 teaspoons salt

grated zest of 2 orange (optional)

2-1/2 teaspoons SAF yeast or 2-3/4 teaspoons bread machine yeast

DIRECTIONS:

Put all ingredients in bread machine according to manufacturer’s recommendations (or mix by hand, blending all ingredients except for flour first, then blend in flour).

Set machine to dough setting (or knead by hand until dough is smooth and elastic – about 7 minutes total between mixing and kneading. If making by hand without machine, allow dough to rest and rise in a greased bowl in a warm place loosely covered for 60-90 minutes until dough has doubled in volume).

Grease 16 standard muffin cups.

When machine indicates dough cycle is complete, remove dough onto a lightly-floured work surface.
Divide into 4 equal portions.
Divide each of those into 4 equal portions.
Divide each of the 16 portions into 3 equal portions and roll into small balls the size of a walnut.
WORK FAST – dough may rise rapidly as you work.

Arrange 3 balls of dough into each of the muffin cups.
Cover with plastic wrap and allow to rise until doubled in bulk, about 30 minutes.

Preheat oven to 375F.

Bake for 15-18 minutes or until golden brown.
Remove from pans and allow to cool on racks.

Brush tops with melted butter if desired.

Happy Holidays From The Emptywheel Blog: A Year To Remember, A Year To Forget And An Open Forum For Cooking, Trash And Other Talk

What a long strange trip 2021 has been. January 6 is still less than a year ago. Joe Biden’s Presidency is only eleven months old. The DOJ and 1/6 Committee are working away nicely on an unprecedented case that is multitudes more complicated and difficult than most all seem to comprehend (although we have been warning of that here from the start). So, as we reach this tumultuous Christmas and New Years’ season, amid the sudden (but quite predictable in spite of anything Biden and Harris say) emergence of Omicron, let’s chill a bit and take stock of it all.

First off, and I used to do this yearly on or about Christmas Eve, a remembrance of our dearly departed friend and colleague, Mary. Mary Perdue was not just a colleague, but a friend to both me, Marcy and most all of our contributors here. Mary left us on Christmas Eve 2011. Our long time regulars know this story, but there are a lot of new people here that should know, because this is the epitome of who we are at Emptywheel and what we have done and stood for from our beginning. I used to copy and repost the entire in memoriam, but will just link today for brevity. If you are new here, check it out.

Okay, on to the food! Because Mrs. bmaz is Italian at root, we always have, like at Thanksgiving, ridiculously awesome homemade spaghetti, meatballs, sausage and sauce instead of the traditional turkey and fixings. We will again. As much as I hate pumpkin pie, our daughter simply loves it, so there will be that too. That will be Christmas Day though, for Christmas Eve, probably steak, or homemade pizza, in the Ooni pizza oven. So, what are all of you eating, from where, and how? Marcy taught me long ago to seek out local and fresh ingredients, whether meat, vegetables or other, and we try to do that. Holiday food is fun!

And, now, for a bit of Trash Talk. Last night the Titans beat the 49ers and all but clinched a playoff spot and division title. Niners are still alive, but a little wounded. The Saturday game of Colts at Cardinals has all kinds of playoff implications. Both would likely still make the playoffs, but the seeding is absolutely critical. The other Christmas Day game of Cleveland at Green Bay is kind of a throwaway, hard to see the banged up and sinking Brownies going the Pack a game at Lambeau. There are too many permutations after the Sunday slate is played to go through here, but ESPN has a nice synopsis.

There is so much more going on, and let’s talk about it. In closing, I’d just like to say thank you for being part of this community, it means everything to all of us here. So, to all of you and yours, have the happiest of holidays and New Year.

While Marcy’s earlier post comparing and contrasting the destructiveness of the current administrations in the US and UK is important, it is far too depressing a way to end 2020. Don’t get me wrong: we absolutely need to be aware of the specific problems induced by, exacerbated by, and enabled by Trump and Johnson, but as critical as that examination of the mess is, we need one thing more.

While Donald and the Grifters were doing their worst this year in DC/Mar-a-Lago, and Boris and the Bunglers were doing the same in the UK, there were others doing other things that were absolutely spectacular. They were spectacular on their own, but in contrast to the elected national leaders, they were even more amazing.

Over in the UK, while Boris was fiddling over Westminster and worrying about deficits, a young footballer (US: soccer player) named Marcus Rashford decided he’d had enough. Marcus grew up in public housing, and was quite familiar with being short of food growing up. One reason his mom fought to get him into a football academy/boarding school at age 11 was because he was good at the game, and another was that it meant he’d get fed decently and allow her income to feed the rest of the family.

Rashford has never forgotten what a difference a decent meal means to a young child, and his efforts to address childhood hunger have grown as he has moved from being a teenage football phenom into one of the stars of the Premier League. A year ago, he led a big local effort in his hometown of Manchester to provide food to the hungry over the holidays; this past year he has been leading the effort to do the same with kids all over the UK — and doing so in the teeth of policies put forward by Boris Johnson and the Tories. In a powerful open letter to the members of Parliament last June, Rashford wrote:

This is not about politics; this is about humanity. Looking at ourselves in the mirror and feeling like we did everything we could to protect those who can’t, for whatever reason or circumstance, protect themselves. Political affiliations aside, can we not all agree that no child should be going to bed hungry?

The next day, after a couple of abortive attempts to defend themselves in the face of huge public support for Rashford’s letter, Boris Johnson and the Tories announced a U-turn and set up a program to feed hungry kids over the summer.

But Poor Boris just couldn’t learn. In October, as COVID-19 continued to ravage the UK, Rashford and others asked Parliament to set up a meal program that would feed poor kids over the Christmas holiday break when there would be no “free lunch” meals at school. Rashford pushed, but the Tories in parliament held firm (or firm enough) to reject a motion to pay for these meals, and so Rashford pushed some more. Two weeks and much outrage later, Boris caved again.

What is so powerful about Rashford personally is that it’s not just about food with him — it’s that he sees real people struggling with real problems, and he works indefatigably to address both the problem and the person. For instance . . .

In February 2020, Rashford received a letter from a young fan, who invited him to be a judge at his school for a poetry competition.

“Dear Marcus Rashford, please will you be our judge for our World Book Day poetry competition?” read the letter.

“The deaf children in Manchester will write poems. Please can you pick your winners! And give our prizes if you can? Please let us know if you can before Feb 7th.”

After agreeing to judge the competition, Rashford then started learning sign language in preparation for the meeting the kids.

The England international has vowed to hand out the awards in person when the current lockdown restrictions are lifted.

Thank God, Marcus Rashford is not alone.

Based out of the US, world-renowned chef José Andrés has been doing the same kind of work. It began when Andrés saw the absolutely inept response to the 2010 earthquake in Haiti. He gathered a bunch of cooks, called on his network of suppliers, and set up a huge field kitchen operation to feed both those responding to the emergency but also the ordinary folks who live there. His work to organize a response meant jobs for local restaurant folks who provided the bulk of the workforce alongside his emergency crew members, and this became a juggernaut in the disaster relief world: World Central Kitchen. Since then, WCK has gone into Puerto Rico after Hurricane Maria, Florida and the Gulf Coast after US hurricanes, and all kinds of other locations suffering from disasters, man-made and otherwise.

And then came COVID-19.

As pandemic-related lockdowns ravaged the food industry, Andrés devoted himself even more strongly to turning the devastated restaurant industry into a powerful force for feeding the growing numbers of folks in need of food. “It is WCK’s intention that by working directly with restaurants and providing demand for the restaurant business, we can get meals to those who need them most while also uplifting an industry that needs all of our help to keep their doors open.” Andrés sums up the mission of WCK quite simply: “Wherever there’s a fight so hungry people may eat, we will be there.”

And they are.

The key to the work of both Rashford and Andrés is that they see themselves as partners with those in need, not as saviors who swoop in and do their thing, take a bow, and then leave. This mindset of partnership stands in stark contrast to Trump and Johnson, and the way in which the broader, non-political community has gotten behind folks like Rashford and Andrés is a challenge to politicians, as Johnson’s Tories learned not once but twice.

This afternoon, Rashford tweeted this out (paragraph breaks added for readability, but punctuation from the original):

I’ve got a game tomorrow so I need to sign off here but before I go I wanted to reflect on what has been the most challenging year. I’ve been so proud to see people coming together to help those in need and that same compassion needs to continue into 2021 because it’s people like you that make this country great and there is still so much more work to do. We have shown the difference we can make when we unite.

Don’t look back on this year thinking you haven’t achieved anything, you achieved everything. You survived 2020. Your strength was tested and you made it. Give yourself a pat on the back. I’m hoping in 2021 I get to celebrate in the crowd with you again, I really just miss that, I can’t believe none of you got to be with me for the Leipzig hat trick but hoping there will be many more.

Everything I have achieved this year has been our achievement I couldn’t have done it without your support. Let’s aim and hope for an equal playing field for all in 2021. Love to you all. Be safe and a happy new year. MR x

Back in late 1970s, in the face of anti-gay activists like Anita Bryant and the politicians like John Briggs who sought their votes, Harvey Milk brought his own community-based political approach to the streets of San Francisco. While he was withering in his critique of those who put the big money powers first, of those who lived to oppress others, and those who preached a “go slow” approach to seeking change, he knew that was not enough. When speaking to his supporters about reaching out to others, he told them that beyond criticism, one more thing is needed: “You gotta give ’em hope.”

That’s what Marcus Rashford does. That’s what José Andrés does. That’s what countless of less famous others do on a smaller, more local level. As I said at the top, Marcy’s earlier post was necessary, but going forward we need signs of hope.

But Rashford is right: there is still so much more work to do. As we come to the end of 2020 and the start of 2021, as we mourn the efforts of Trump and Johnson to push their countries into hopelessness, who gave hope to you and your corner of the world?

Thanksgiving Day Cheer

Okay, the football gods did not smile on fans today. Texans at Lions and Washington Football Team at Cowboys is about the worst schedule the NFL could put up. There was a Steelers and Ravens game for the night slot that would have been interesting, but, alas, it was rescheduled to Sunday because of the Coronavirus. Blecch.

But, hey, there is a lot else to be thankful for. Especially here, thanks to all of you. And so we are thankful for all of you!

Also food. Mrs. bmaz is cooking up some great grub, and I know there is some awesome looking stuffing, some turkey (not the turducken I requested, but it will be fine). That, and that some part of it involves some of my personal stash of bacon from Zingermans (thanks Marcy!), is about all I really know. There is Blueberry Crumb Pie from the Rock Springs Cafe (as good of pies as you will ever taste), and vanilla bean ice cream. Some nice red wine, and that will do it.

All COVID-19 is Local, BBQ edition

Burnt Ends from LC’s BBQ in Kansas City

Here in metro KC, our five county area that straddles the MO/KS border and the Missouri River did a relatively good job of shutting down, even in the face of state-level idiocy in both Topeka and Jefferson City. School buildings were closed, large gatherings were cancelled, and when the two states finally caught up and issued state-wide orders, it meant fairly little around here because metro KC had already done much of what was prescribed. It hasn’t all been easy, of course, but folks adjusted and life has gone on.

Now, though, things just got real.

From this morning’s featured story on the KC Star’s website (with emphasis added):

Arthur Bryant’s Barbecue lucked out with a hefty contract two months ago, securing 1,200 cases of brisket at a price of $2.45 per pound. As the pandemic began, meat prices actually dropped and the restaurant snagged another 400 cases at $1.75 per pound, said owner Jerry Rauschelbach.

He said those purchases mean Arthur Bryant’s will be set for the next several months. But they also show how fast the market has moved: brisket was selling for more than $6 per pound this week, he said.

At that price, menu prices would soar by the time the meat is trimmed, smoked and served.

“If I didn’t have brisket and I had to pay $6 a pound, I would take brisket and burnt ends off my menu,” he said. “There’s just no way I could consciously serve sandwiches at 20 bucks. There’s just no way.”

For the uninitiated, a brisket is a big slab of meat with two parts – the flat and the point. The point takes longer to cook properly, so the two parts are either split and cooked separately, or they are cooked together until the flat is done and then the point goes back into the pit. It has more connective tissue that needs longer time to break down, and when done right you get a dark “bark” on the surface of the meat and some of the most tender and flavorful deliciousness on the inside. They’re generally cut in cubes and served either on a plate or a sandwich and when done right, they are spectacular.

There’s a lot of folklore around BBQ and who invented different styles or cooking methods or what kind of sauce to use, and damn near every little thing about putting meat over a fire. The origin of selling burnt ends is not folklore or in doubt: they were invented at Arthur Bryant’s. The point of the brisket was seen for years as waste when you trimmed and cooked the brisket flat for sandwich slices, and the counterman at Bryant’s would cut the point in chunks and set it up on the counter for customers to nibble on while waiting to get to the front to order their food. (Note: Bryant’s has also been legendary for its lines.) Eventually they realized “Hey, we could sell this stuff!” and so they did. And then so did everyone else in town. [Time suck warning: that link goes to a 30 minute video that will introduce you not just to burnt ends, but to a good chuck of KC’s best BBQ joints as well.]

So I’ll say it again: things are getting real in KC when Arthur Bryant’s is even contemplating having to take burnt ends off the menu.

I do not want to dismiss what’s happening in hospitals and prisons and nursing homes. That’s as real as real gets. I know a lot of folks in a meatpacking town in southeast Kansas where a cluster of cases has emerged. Things got real there, really quickly, once that hit. What I am saying here is that KC takes its BBQ seriously — as seriously as the pope takes communion — and this nugget about Arthur Bryant’s BBQ is a very KC-specific cultural sign of just how deeply this pandemic is hitting. We can deal with closing our school buildings and postponing our April elections until June and even closing our church buildings, but burnt ends going off the menu of Arthur Bryant’s (even temporarily) would truly be a sign of the apocalypse.

But if BBQ is the way Kansas City identifies the the apocalypse, it’s also how KC identifies hope.

For several years, Jim White has been active in Operation BBQ Relief. which was founded in KC by a bunch of folks in the competition BBQ world. Over the last 9 years, OBR has expanded across the country, and their crews of volunteers have taken their cookers to areas hit by natural disasters, to feed both those hit by the disaster and the emergency workers who come in trying to deal with it. When I sent Jim, Marcy, Bmaz, and some others a link to the KC Star piece, Jim replied with a link to an April 8 press release about OBR and their newest project, Operation Restaurant Relief:

In addition to deploying their trademark effort of providing hot barbecue meals to those affected by natural disasters, Operation BBQ Relief launched a new program called Operation Restaurant Relief with great success last week in Kansas City.

The new initiative revives closed restaurants by utilizing their kitchens to provide free meals to those in need and those on the front lines. As part of the effort, the restaurants will rehire laid off workers to comply with the program and receive a stipend for their participation from Operation BBQ Relief.

Jim could tell you a lot more about OBR, but he’s got a very important matter to attend to at the moment* so unless/until he shows up in the comments, let me direct you to their website at the link above. He did share with me his impression that OBR is doing “pretty amazing work for a group that is populated with folks who lean to the more conservative side of things – sometimes very conservative. They are slowly learning empathy.” This sounded familiar, and sure enough, Jim wrote in more depth about this kind of empathy after he worked on a OBR mission in Wilmington, NC.

That’s another thing about BBQ. Here in KC, despite having a long and ugly history when it comes to race, BBQ is one of those things that does better when it comes to crossing racial divides, in part because some of the most respected historic BBQ joints around here are African American. Even if someone’s favorite ‘cue doesn’t come from Bryant’s or Gates or LC’s, these places get a lot of respect. Arthur Bryant’s and the original location of the Gates chain are in areas of KC that a fair number of white folk would never dream of entering — but they’ll go there happily to get their BBQ fix if that’s their favorite.  Put it this way: BBQ lovers have very firm opinions about color and argue a lot about color, but they’re usually talking about the smoke ring when you cut the meat open or the overall doneness of what you’ve prepared, not the color of the cook’s skin or anyone else’s. And when people share a disaster response cooking line with folks who don’t look like themselves, it changes the way people see each other – that’s the empathy part.

Back in the day, I waited tables and washed dishes, so I know what restaurant life is like from the worker’s point of view. If you’ve got some money and are looking for a charity out there doing great COVID-19 work on the non-medical front, you could do a lot worse than Operation BBQ Relief and their restaurant relief program.

And if you’re a praying kind of person, you might pray that burnt ends do not disappear from the menu of Arthur Bryant’s.

* Marcy, knowing what happens when BBQ lovers start talking BBQ, interrupted our email discussion before it could really get going, with the observation that this subject “would be a lovely post if any one of you had access to a blog.” Since I brought up the subject, I agreed I could write it up. Jim, for his part, begged off: “The BBQ site I hang out on is having a virtual cookoff. We had two weeks to submit an entry and I forgot to load up on interesting stuff to cook and submit. But we got a spaghetti squash in our CSA basket yesterday and I have some chicken breast and sweet peppers around. Gonna roast the squash and a bunch of veggies on the grill with the chicken and then make pasta sauce to go on it with the chicken.”

Jim may hold various heretical BBQ notions, but those words above comes from the heart of a true BBQ person. When your plans go awry (or you forget to follow them), you make do with what you’ve got — and that menu sounds delicious.

Long Overdue Policies that Look Obvious in the Age of Pandemic

I’m not usually a fan of George Packer. But I keep coming back to this column, We Are Living in a Failed State. The coronavirus didn’t break America. It revealed what was already broken, which is something I might have written. It argued that this pandemic, to which the US responded like a corrupt poor country, was actually the third crisis of this century, and our responses to the previous two — 9/11 and the Iraq War, and the Wall Street crisis — simply brought this country to the place where Trump could loot it.

Like a wanton boy throwing matches in a parched field, Trump began to immolate what was left of national civic life. He never even pretended to be president of the whole country, but pitted us against one another along lines of race, sex, religion, citizenship, education, region, and—every day of his presidency—political party. His main tool of governance was to lie. A third of the country locked itself in a hall of mirrors that it believed to be reality; a third drove itself mad with the effort to hold on to the idea of knowable truth; and a third gave up even trying.

Trump acquired a federal government crippled by years of right-wing ideological assault, politicization by both parties, and steady defunding. He set about finishing off the job and destroying the professional civil service. He drove out some of the most talented and experienced career officials, left essential positions unfilled, and installed loyalists as commissars over the cowed survivors, with one purpose: to serve his own interests. His major legislative accomplishment, one of the largest tax cuts in history, sent hundreds of billions of dollars to corporations and the rich. The beneficiaries flocked to patronize his resorts and line his reelection pockets. If lying was his means for using power, corruption was his end.

Packer ends with a call for renewed solidarity.

But he might as well also call for a fix to all the failures of the past twenty years. Right now, mind you, Trump is failing, miserably, in part because he believes maximizing the opportunities for looting by his friends is all the policy he needs.

But the sheer scale of the crisis makes policies that long made sense for the United States more urgent and far easier to justify. I plan to keep a running list of those policies.

Medicare for All

No one has figured out how all the people put out of work by the shut-downs will pay for COVID-related health care. Trump has persisted in a plan to kill Obamacare, and some badly affected states never even expanded Medicaid.

Early reports suggested that Trump’s administration has claimed it is willing to pay hospital bill, so long as they pay those bills directly (thereby avoiding establishing a policy, I guess). But with so many people out of work and with hospitals reeling from the shut-down, the far better solution is to make Medicare available to all.

Universal Basic Income

The US government has been backing credit for big industry and tried, but failed, to provide free money for small businesses to keep their employees on staff. Instead, 26 million Americans have applied for unemployment, a sixth of all workers (and a third of all workers in MI, KY, and RI). Meanwhile, the Administration botched even a one-time $1,200 payment.

The government could better ensure that markets don’t crash entirely–and keep states from buckling as they try to serve all these unemployed people–if they simply gave a UBI to all people, as Spain has decided it will do. By keeping it, the US might be able to address the underlying inequality problems that have led to such a disproportionate impact of COVID on communities of color.

Decarceration

Closed spaces, generally, amount for a huge percentage of COVID cases and (in the case of nursing homes) deaths. ACLU just rolled out a paper that argues the models for COVID (which were originally based off other societies’ social patterns, including their prison system) underestimate the total number of deaths because they don’t account for the spread in our prisons.

COVID will remain lethal for long enough that states and the federal government will need to achieve some level of decarceration to prevent the prisons from becoming a source of spread to the wider community (as they have become in the localities with harder hit prisons).

In this case, even before COVID hit, there was bipartisan support to wean ourselves from overincarceration. Prisons will become less lucrative in conservative communities, especially as some states begin to end prison gerrymandering (which gives rural communities representation for prisoners who can’t vote, just like slavery did).

So now is the time to end incarceration for minor crimes, and improve the humanity of incarceration for those who need to be jailed.

Deindustrialization of the Food System

We’ll be lucky if we avoid famine conditions. That’s partly because our food system has the same institutional/retail split our toilet paper supply chain does, meaning the market for half of the food out there disappeared when restaurants and other institutional buyers shut down. That’s partly because bottlenecks in our food supply chain — most notably, thus far, meatpacking plants, but there will be others — have further undermined the market for our plentiful food production. And that’s partly because Trump’s farmer support, thus far, has emphasized direct payments that are effectively a continuation of his earlier bribery of farmers whose markets his trade war screwed, rather than purchasing up surpluses to provide to food banks.

Trump hasn’t shown an ability to get any other needed supplies where they’re needed; it’s unlikely he’ll do better with food.

Meanwhile, food supplies that bypass these commodity markets remain. We need to make this food supply chain more resilient and one way of doing so is to bypass the industrial bottlenecks.

Broadband as a Utility

When schools shut down, it suddenly became acutely visible how many Americans — both rural and urban — don’t have broadband. While some areas have gerry-rigged solutions (like driving wifi-enabled busses to poorer neighborhoods) to get some kids online and learning, that’s not possible everywhere. And even for adults, it takes broadband access to be able to social distance.

Trump is already talking about using infrastructure investments to get America working again. Extending basic broadband as a utility should be part of that.

Industrial Policy

Two months after we first identified shortages in necessary medical supply, we’ve barely managed to switch production to those necessary objects, even as entire factories were otherwise shut down. We’ve got shortages of not just testing kits, but the underlying supplies. We’ve got drug shortages too (and had them, even before the President started pitching miracle cures).

It’s long past time to admit that we do have an industrial policy — but right now, it’s focused on building the troubled F-35, not ensuring that the United States has the ability to build the things we need domestically, even if we interact openly with the rest of the world. This story uses the failed lithium battery investments Obama made, largely in Michigan, to talk about how we came to be unable to supply our own medical equipment.

We have an industrial policy. We just need to be willing to match that policy to our society’s real needs, not exporting warmongering.

Rural COVID-19: The Tyson Food Clusters

There has been a lot of attention to the COVID cluster in the Smithfield plant in Sioux Falls, SD, which shut down after hundreds of workers became ill with COVID-19. One worker in the factory died.

But there’s another meatpacking plant that has had four deaths: a Tyson’s Food plant in Camilla, GA.

Four employees of a major poultry producer’s operations in rural southwest Georgia have died after becoming infected with the coronavirus, a company spokesman said Friday.

Tyson Foods spokesman Gary Mickelson said three of the employees worked at the company’s chicken processing plant in Camilla, while the fourth person worked in a supporting job outside the plant. He declined to say how many workers there have tested positive for COVID-19, the disease caused by the new virus.

The Retail, Wholesale and Department Store Union, which represents 2,000 workers at the Georgia chicken plant, identified the three plant employees who died as women who had worked there for 13 to 35 years. A statement from the union said many plant employees are “sick or in quarantine.”

This factory is commuting distance — 30 miles — from Albany, GA, where a funeral on February 29 led to a significant cluster. It’s in Mitchell County, GA, which has a population of around 22,000, of whom about half are black. Camilla itself is about 5,600 people, of whom 66% are black. The poultry plant is the largest employer.

Coronavirus has spread to the next largest employer in town: Autry State Prison, which employs 500 people and houses 1,700 prisoners. 4 staffers and 6 prisoners have tested positive, according to official numbers. (And a County jail has 3 cases.)

While Tyson Foods has implemented some measures to slow the spread — including making masks mandatory — it still isn’t providing sick pay.

Gonzalez said the company has improved safety measures at the Camilla plant by checking employees’ temperatures, requiring workers to wear face coverings, installing dividers at work stations and providing more space in break rooms. He said the company in March had “relaxed our attendance policy to encourage workers to stay at home when they’re sick.”

The union has called on poultry processors to require employees to quarantine themselves for 14 days, and pay them sick leave, when they’re exposed to co-workers testing positive for the virus. It also wants individual departments to be shut down for 72 hours and cleaned after a worker tests positive.

The CEO of Tyson Foods, Dean Banks, is one of the CEOs Trump claims to be consulting on how to reopen the country. Yet his plants are responsible for two clusters of COVID.

148 of the workers in a Tyson pork plant in Columbus Junction, IA have tested positive, and two have died. 47% of the population in Columbus Junction are Hispanic and 12% Asian.

Tyson’s workers account for 89% of the cases in rural Louisa County. This story includes an anonymous family member of someone who works at the plant claiming that Tyson’s public comments about preventative measures at the plant are not true.

The relative of one plant worker, however, disputed that, telling Starting Line the company did not provide face masks to workers, still had people working in close proximity to each other, allowed workers to eat together in the break room, and that workers weren’t told of the infections until the day the plant shut down. Not wanting to disclose their name, they also noted the only changes made at the plant were taking employees’ temperatures as they came in, encouraging people to wash their hands, and displaying posters with information about the virus in multiple languages.

Trump and Tyson Foods seem to think these workers are expendable. But if food plants continue to cause clusters like this, it’ll not only shut down key parts of the food supply, but create clusters of COVID-19 in rural areas that are far less equipped to deal with it.
